Smooth Hokkaido milk chocolate sandwiched between crispy langue de chat cookies
Shiroi Koibito is made by pairing a light, crispy langue de chat cookie with smooth white chocolate made using our original recipe. The cookies are baked until the edges turn a delicate golden brown, giving them their signature crisp texture.
Langue de Chat
A langue de chat is a classic French cookie known for being thin, buttery, and melt in your mouth. The dough is made by mixing softened butter, sugar, flour, and egg whites, then shaped into slim bars and baked to perfection.
To make Shiroi Koibito, we sandwich our special white chocolate between two freshly baked cookies. Every step of the process is handled with care, even small changes in temperature, humidity, or timing can affect the texture and flavour. That’s why we pay close attention to every detail to ensure the cookies are consistently delicious.
Shiroi Koibito has been loved for over 40 years because of this commitment to quality.
A little story
The mountain on the Shiroi Koibito box is Mt. Rishiri, one of Hokkaido’s most beautiful peaks. When the former president of Ishiya visited Rishiri Island, the view reminded him of the Swiss Alps. Since he was creating European style cookies, he chose to feature Mt. Rishiri on the package a symbol of beauty, craftsmanship, and the brand’s Hokkaido roots.
